Simon Bryant has been Executive Chef at Hilton Adelaide since 2001, but it is his transformation of The Brasserie where Simon emerged as one of Adelaide's hottest young chefs. Simon brings a fresh, down-to-earth approach to cooking and has a great appreciation for simple food cooked properly. His passion for fresh local produce has resulted in an innovative concept, Seriously South Australian cuisine, which promotes the State's finest produce.
Simon's passion for cooking is evident in his regular cooking classes in The Hilton Adelaide's main kitchen, and the success of the ABC1 hit series, The Cook and The Chef, which he co-stars with local food icon Maggie Beer.
Located next to the Adelaide Central Market, we could not have better inspiration for our chefs to source new culinary ideas, adjusting not only their menus but also their recipes according to the seasons. The Brasserie provides a simple yet modern, airy atmosphere.
